3 Classic Thanksgiving Recipes Made Healthy

I practically make a personal Thanksgiving meal each year, partly because I don't eat the main course (gobble gobble) and partly because I love experimenting with healthy versions of my favorite Holiday recipes. I curated a list of my favorite recipes for the Thanksgiving Holiday. Whether you're cooking for yourself or your family this year, try one of these dishes for a surprisingly healthy treat.

Vegan & Gluten-Free Pumpkin Pie

One of my favorite Thanksgiving dishes - pumpkin pie! When substituting gluten, sugar, and eggs, it's often difficult to get the right texture. Jessica In The Kitchen does a pretty great job at making sure this pie tastes just like the original. It also happens to be refined-sugar-free if you use coconut sugar!

Tip- if you don't want to use cornstarch, use arrowroot starch. I did this and did about 6 tablespoons of arrowroot starch instead of the 1/4 cup corn starch. 

Cauliflower Stuffing

This is another one of my favorite dishes. I LOVE stuffing, but a lot of it requires chicken stock/broth which I try to avoid when I can because I don't digest it very well. One option is to get the gluten-free stuffing mix from Whole Foods and use vegetable stock. Orrr you can go one step further and make this cauliflower stuffing from Delish. It's packed with flavor and nutrients. I use Miyokos vegan butter or a good grass-fed butter!

Sweet Potato Casserole

Mmmm sweet potato casserole with marshmallows - hold the marshmallows (or not... up to you!). I love this sweet potato casserole that's also from Jessica In The Kitchen. It's vegan, gluten-free, and can be made refined-sugar-free with coconut sugar (I suggest using about half if using this). This sweet potato casserole does not hold back any sweetness whatsoever.
